Perfectly Done Pie Crust

Ever bake your pie and end up with a too-dark crust? Especially with larger-size pies, the cook time can run a little long for the delicate crust – which you don’t want darker than golden.

Here’s a simple solution.

After you’ve formed the crust.

Take a square piece of tin foil a little larger than your pie pan and gently form it around the crust.

Then remove from crust and cut out center so it looks like a large foil donut.

Remove foil and set aside.

Bake pie until crust is turning golden but not quite there.

Carefully slide oven rack out and place foil over the crust. Finish baking until pie is done.

Remove foil and you’ve got a perfect crust.
